Believe it or not Tiffany and I met at the ripe old age of 17 as County Dairy Princesses, fast forward a few years and thanks to the power of the interwebs we have reconnected with a love mutual love of food, health and fitness.
Whether we like it or not pizza is the great American food. Pies, slices, rolls what ever your preferred method pizza is delicious! And let’s be honest my family eats pizza in some form about once a week. If it’s a busy week we might have it more than once. And sometimes for simplicity we will order a large pie and enjoy the left overs for days. Shhhh…don’t tell anyone that’s my secret ![]()
Although lately I’ve grown tired of regular pie and have been looking to spice up our pizza nights. My kids like cheese and I’m in love with garlic and somewhere it’s gotten bored and old. If your pizza nights have gotten boring shake them up with Spinach Tomato Feta Pizza! With this recipe I’m mixing dill, basil and feta to give our pizza night a Mediterranean feel.

This basis for the pizza is a Feta spread that gives it a creamy base without using a traditional pizza sauce.

Feta Spread:
- 8oz Reduced Fat Cream Cheese soften
- 1 cup feta crumbled cheese
- 1 tablespoon basil (fresh if you have it!)
- 2 teaspoons dill
Mix until a creamy spread. Please note the above picture isn’t completely mixed, it will appear more white than this.
Spread a thin layer on your pizza crust. Please note I’m using two different crusts in these demonstration photos one is a store-bought pre-made the other is a home-made cauliflower crust. How do you make a cauliflower crust you ask? It’s actually much easier than I expected it to be and pretty tasty too. If you are on a Gluten free or Paleo diet this is a great alternative to pizza dough.
Cauliflower Pizza Crust:
- 1 head of Cauliflower riced
- 1 Large Egg
- 1 cup cheddar cheese
- 2 teaspoons dried Parsley
- 1 teaspoon dried Oregano

Add your spinach then layer on top your diced tomatoes. I’m using canned for ease but I bet fresh in season tomatoes would set this pizza over the top!
And top with some fresh mozzarella cheese I’m also using a little shredded cheddar…yummmm.

Bake at 350 degrees for 15 minutes and enjoy!
