Yes folks, this was my dinner last night….well, our dinner–for two.
It was delish. If you like fish, Red Snapper in this instance, you will enjoy this recipe. We went with the “Asian” version. Watch out for those scales, they fly everywhere!
This was about a 1 lb. fish and took about 20 min. to cook. I also put a small rack under it (you might be able to see it if you look closely) and stuffed a ball of foil in it’s empty cavity to help it stand up and used a foil ball under the tail too.
Stir-fryed up some snow peas w/ ginger, garlic, and soy to compliment the dish and PIC made a fresh batch of rice. Voila!
