Weekend eggs-sausage version


After several hours with my friend, “coffee” and DVR, my stomach began to remind me that it was time to fill it up with some good weekend eggs.  This week, the sausage version.  Any version would be great and even putting one of those little patties on the bottom of the ramekin would be awesome.  Since I had loose (hot) sausage, I lined the bottom of the ramekins with it, making its’ own little cup.

You’ll need:

Serves two

30 min.

  • two patties worth of sausage
  • 3 eggs
  • sour cream/milk/cream to thin eggs
  • shredded cheese
  • salt/pepper
  • no stick spray
  • ramekins

You could also add: veggies, other meats, bread on the bottom, etc…

Pat sausage into bottom of ramekins and build up onto the sides of the ramekins.  Scramble eggs with whatever binder you choose, salt/pepper, and cheese.  Add anything else you want in your little egg bundles.  Distribute eggs evenly among the two ramekins.


Bake at 350 degrees for 20 minutes or until eggs are set to your liking.  Enjoy with another cup of coffee!

*some would say you should cook the sausage, you do what you think is best, I chose to leave it uncooked knowing that the oven time would be more than sufficient for the thin layer I put in each ramekin.
