Spicy pork kebabs

Spring has sprung and the grill is fired up!  I am continually trying to think of things I can put on the grill and reduce dishes while making tasty food.  This one will NOT make you sad…..With only three ingredients, this recipe is super easy, simple, and can be in your mouth in less than 20 minutes.

Ground pork mixed with baking mix and cheese–sound like one of those sausage balls at the holidays??? Why yes ma’am, you’d be correct! Wrapped in a skewer and grilled to crusty perfection, these will make you so happy!  The outside gets all good and crusty on the grill, it’s really magical.  Add some sweet dipping sauce to offset the heat of the hot sausage and you’ve got yourself a fantastic main course for a meal.

You’ll need:

Serves four

  • 1 lb. of pork sausage
  • 1/2-3/4 c. baking mix. I used heart healthy bisquick
  • 1/2 c. shredded cheese
  • 6-8 skewers

Mix the ingredients by hand in a bowl.  If you’re using wooden skewers, soak them in water so they don’t burn up on the grill.  I like to lay mine out in a cookie sheet, put water in it, and weigh the skewers down with a glass.  They need to soak for 15-30 minutes depending on how much patience you’ve got.

Wrap the skewers with the sausage mixture to your desired thickness.  Place on a grill that’s been heated to medium heat.  Cook on each side approximately 3-4 minutes and turn until they are crusty and delicious (and cooked through, this is pork….)

Serve alone with sauce.  Might I recommend: ranch, sweet and sour, honey mustard, pretty much anything???
