Clearly, you don’t need a rainy day for a ruben, but there is something about a hot sandwich with melted cheese on a rainy day…The corned beef spent half a day in the crock pot on high, making the house smell like heaven and I took the time to make some extra spicy Russian dressing. They say you should take as much time to eat a meal as you did preparing it, but I don’t have four hours to eat a sandwich. 😀
- 4 slices rye bread
- 1-1 1/2 c. shredded corned beef
- 4 slices havarti cheese
- 1/2 c. sauerkraut
- 4 T. russian dressing
- Pre-heat skillet.
- Layer russian dressing on one side of each slice of bread. top with cheese.
- On one slice of bread, add corned beef and sauerkraut.
- Grill in butter on each side until cheese melts.
- Serve hot!
