Rainy day hot ruben

Clearly, you don’t need a rainy day for a ruben, but there is something about a hot sandwich with melted cheese on a rainy day…The corned beef spent half a day in the crock pot on high, making the house smell like heaven and I took the time to make some extra spicy Russian dressing.  They say you should take as much time to eat a meal as you did preparing it, but I don’t have four hours to eat a sandwich. 😀

You’ll need:

Serves 2

  • 4 slices rye bread
  • 1-1 1/2 c. shredded corned beef
  • 4 slices havarti cheese
  • 1/2 c. sauerkraut
  • 4 T. russian dressing
  • butter
  1. Pre-heat skillet.
  2. Layer russian dressing on one side of each slice of bread. top with cheese.
  3. On one slice of bread, add corned beef and sauerkraut.
  4. Grill in butter on each side until cheese melts.
  5. Serve hot!
