Turkey Club With NY Apples + Halloween Giveaway!

Happy Halloween!!! I’m sure you’ll be dashing around to get the kids dressed up, layered up, hand out candy, or take the kids out for some spooks! This sandwich will make everyone happy, get something in everyone’s stomach, and leave time for the best part of the day. The thin slices of apples give it an amazing crunch and the sweet/tart combination plays off the saltiness and meaty texture of the turkey and bacon. Really, it’s lovely. I ate these all week for lunch and dinner since they were so good.  I took the time and cooked off a large quantity of bacon and kept it in the fridge for safe keeping. I hid it in the way back to keep me from eating it slice by slice. I’m sure your self control is vastly better than mine.

Sometimes there’s just not enough hours in the day to be amazing, do it all, be a good person at work, at home, and put a five course meal on the table. The holidays are also creeppppppiinnnggg right along, which became evident as many places have already rolled out their festive gear. This recipe makes a great use of some of that leftover turkey or on a night when you just need a quick and hearty meal for you and your family or sandwiches for lunches. Dress it up or dress it down, heck, add some leftover dressing (AKA stuffing) to it, it’s my personal favorite with some cranberry sauce.

You’ll need:

  • Slices of bread
  • Deli or roasted turkey
  • bacon (pork or turkey)
  • cheese of choice, sliced
  • fresh lettuce
  • thinly sliced apples
  • mayo
  • mustard
  • other condiments
  1. Assemble as you desire. I like my bread toasted for a warm and comforting sandwich. Go buck wild.
  2. Layer each aspect and cut in half.
  3. Take a big old bite and ENJOY!!

Rainy day hot ruben

Clearly, you don’t need a rainy day for a ruben, but there is something about a hot sandwich with melted cheese on a rainy day…The corned beef spent half a day in the crock pot on high, making the house smell like heaven and I took the time to make some extra spicy Russian dressing.  They say you should take as much time to eat a meal as you did preparing it, but I don’t have four hours to eat a sandwich. 😀

You’ll need:

Serves 2

  • 4 slices rye bread
  • 1-1 1/2 c. shredded corned beef
  • 4 slices havarti cheese
  • 1/2 c. sauerkraut
  • 4 T. russian dressing
  • butter
  1. Pre-heat skillet.
  2. Layer russian dressing on one side of each slice of bread. top with cheese.
  3. On one slice of bread, add corned beef and sauerkraut.
  4. Grill in butter on each side until cheese melts.
  5. Serve hot!
